New York Brewery & DASSAI BLUE
With the official opening of our New York Brewery in September 2023, we will begin brewing a brand new sake called DASSAI BLUE.
The name is derived from a Japanese proverb literally translated as, “Although blue dye comes from the indigo plant, it is bluer than indigo.” The deeper meaning is that we expect DASSAI BLUE to surpass the existing Dassai brand in greatness.
This new sake will be made using New York water and the same Yamada Nishiki rice we use in Japan. We will be sourcing our Yamada Nishiki from both Japan and the US to produce only Junmai Daiginjo, the highest grade of sake.
