DASSAI BLUE

About the Brewery and DASSAI BLUE

We at Asahishuzo are currently building a new sake brewery in Hyde Park, NY. Here we will be brewing “DASSAI BLUE”. The name comes from a Japanese proverb, which literally translates as “Although blue dye comes from the indigo plant, it is bluer than indigo.” This means that the child should always exceed the parent, and it is our expectation that DASSAI BLUE will surpass it Japanese parent.

DASSAI BLUE will be made using New York water, and the same Yamada Nishiki rice we use in Japan. We will be sourcing our Yamada Nishiki from both Japan and the US to produces only Junmai Daiginjo, the highest grade of sake.
