Dassai 45 - unpasteurized
This is a classic winter take on the usual Dassai 45, freshly pressed.
When tried along with the usual Dassai 45, you can taste a clear difference - a fruity depth characteristic to freshly pressed sake.
This sake has been upgraded from the traditional Dassai "Kanzukuri" 48% - by polishing the Yamada-Nishiki rice 3% more.
Unpasteurized, to be kept chilled.
Yamada Nishiki rice, polished down to 45% of the original grain size.
