DASSAI has renewed its kosher certification annually since 2011.

Kosher refers to food and beverages produced in accordance to Jewish precepts, where there are strict standards for processing methods.

To be kosher certified, the rice, koji (malted rice) and water used to make sake, as well as the brewery’s facilities and production process must undergo rigorous examination to ensure that they meet the regulations.

Moreover, Rabbi Binyomin Y. Edery, the Chief Rabbi at “Kosher Japan”, personally visits our brewery for inspection to ensure that the terms of agreement are being followed for the annual renewal.

Kosher certified foods are recognized as safe and secure not only by Jewish people, but also by people around the world.Through DASSAI, we hope that people of various backgrounds can enjoy sake with peace of mind.
