The Spark for This Collaboration Began with Dassai at a Sushi Restaurant in Austria

The background of this collaboration traces back to when Mr. Harald Mahrer, President of the Austrian Federal Economic Chamber, had DASSAI at a sushi restaurant in Vienna. He fondly remembered the experience, which became the starting point for our partnership.
In April 2024, President Mahrer visited our brewery, and I was deeply moved when he personally shared his story of encountering DASSAI. I also vividly recall being touched by his proposal to showcase a special collaborative version of DASSAI at the 2025 Osaka-Kansai Expo, as a symbol of friendship between Japan and Austria.
And so, we began brewing DASSAI Composing the Future.

Respecting Each Other’s Cultures — Making a Sake Enjoyed Around the World

Since exporting DASSAI to Taiwan for the first time in 2002, we have expanded to over 40 countries and regions across every continent.
We believe this global reach has only been possible because we have always valued and respected the unique cultures of each place we enter. That respect is at the heart of what DASSAI stands for.
How, then, could we convey the special concept behind DASSAI Composing the Future—a sake born from mutual respect for one another’s history, culture, and values—to an even wider audience?
The answer we arrived at was a musical collaboration between Austrian and Japanese artists.
In 2025, the 200th anniversary of the birth of Johann Strauss II, members of the world-renowned Vienna Philharmonic formed a sextet named “Philharmonic Taste”, and joined forces with the full orchestra of Japan's leading ensemble, the Japan Century Symphony Orchestra. Each orchestra performed Strauss’s Lagoon Waltz in their respective countries. The recordings were then combined and harmonized in Austria.
This waltz—born from the harmony between Austria and Japan—was played during the fermentation process of DASSAI. This truly unique DASSAI is born as DASSAI Composing the Future.
The label features the musical score of Lagoon Waltz along with the logos of both orchestras, symbolizing this one-of-a-kind collaboration.

This collaboration began when we were approached by President Harald Mahrer of the Austrian Federal Economic Chamber, who even took the time to visit our brewery in person.

With the 2025 World Expo set to take place in Japan, he expressed a desire to undertake a joint project with a Japanese company.
Given his familiarity with DASSAI, he proposed a collaboration between DASSAI and Austria.
Austria is home to the world-renowned Vienna Philharmonic Orchestra.

In 2012, one of its musicians—Andreas Grossbauer, first violin—brought music and fine dining into perfect harmony by founding the Philharmonic Taste project. A symphony of exquisite chamber music and culinary artistry was born.

To give this DASSAI sake a truly unique note, the fermentation tanks resonated with the melodies of Johann Strauss II’s Lagoon Waltz. A sextet from Vienna- with Members of the Vienna Philharmonic, joined by musicians from the Japan Century Symphony Orchestra, wove a musical bridge between Vienna and Osaka. Thus, DASSAI – Composing the Future came to life.
We firmly believe that delicious sake, capable of moving people's hearts, is just as essential to human society as music.

Furthermore, as we export our sake worldwide, we do so with deep respect for the cultures of each country. We take great joy in collaborating with these cultures to create new experiences and new forms of enjoyment.
From these two perspectives, we are honored that our brewery can contribute to strengthening the friendship between Austria and Japan and fostering a deeper mutual understanding of each other’s cultures through this special DASSAI.

In line with the slogan of the Austria Pavilion, "Composing the Future," we sincerely hope that the bond between Japan and Austria will continue to grow ever stronger.
